Du er landet på hjemmesiden for projektet Food Upcycling – et projekt, der hjælper virksomheder med at omdanne underudnyttede sidestrømme fra fødevareproduktionen til værdifulde produkter. Målet er at reducere madspild, mindske miljø- og klimaaftryk og styrke konkurrenceevnen for danske fødevareproducenter og relaterede industrier som proces-, teknologileverandører og transportører.
Projektet løber fra 2025 til 2027 og vurderer i perioden forretningspotentialet for upcycling af sidestrømme i samarbejde med over 200 danske og internationale virksomheder. Cirka 40 virksomheder får skræddersyede udviklingsforløb med fokus på procesudvikling, sikkerhed og holdbarhed.
Food Upcycling hjælper virksomheder med at skabe profit af sidestrømme gennem
- workshops, der får virksomheder i gang,
- samarbejdsprojekter på tværs af værdikæder om udnyttelse af sidestrømme,
- et digitalt kortlægningsværktøj, der guider virksomheder i udnyttelse af sidestrømme, matchmaking med danske og internationale virksomheder,
- en vidensressource med lovgivning, værktøjer og vejledning til sikker, rentabel udnyttelse af sidestrømme.
Hjemmesiden fungerer som knudepunkt for projektets viden. Her publiceres løbende cases med virksomheder, der har skabt forretning af sidestrømme fra fødevareindustrien. You have landed on the website for the Food Upcycling project. The project helps companies transform underutilised side streams from food production into valuable products. The aim is to reduce food waste, minimise environmental and climate impact, and strengthen the competitiveness of Danish food producers and related industries such as process, technology suppliers, and transporters.
The project runs from 2025 to 2027 and, during this period, will assess the business potential of upcycling side streams in collaboration with over 200 Danish and international companies. Around 40 companies will receive tailored development programmes focusing on process development, safety, and shelf life.
Food Upcycling helps companies generate profit from by-product streams through
- workshops to get companies started,
- collaborative projects across value chains to utilise by-product streams,
- a digital mapping tool to guide companies in utilising by-product streams,
- matchmaking with Danish and international companies,
- a knowledge resource with legislation, tools, and guidance for safe and profitable utilisation of by-product streams.
The website serves as a hub for project knowledge. Here, cases with companies that have created business from food industry side streams are published on an ongoing basis.
